Bok Choy (Pak Choi) is a staple microgreen on our farm! It's very easy to grow, resilient to a lot of warehouse conditions, and also does very well in hydroponic systems. Loaded with Vitamins C, A, and E, bok choy is also high in folate for skin and nails. It has anti-inflammatory benefits, and promotes strong bones. It's mild cabbage flavor and crispy texture as a micro make it a versatile plant to cook with.
Bok Choy micros are a crunchy addition to any salad or sandwich, excellent in Vegan wraps as a flavor booster. It's mild and slight cabbage flavor also tastes great in soups or as a beautiful plate garnish. Reserve a few seeds to be grown in the garden to full size for stir fry.
