Authentic Caribbean - Jamaican precisely - jerk seasoning. We even get our scotch bonnet peppers from Jamaica. If you like chilis and heat you will enjoy this rub. Either clean the chicken with vinegar (traditional method from the island), then oil and rub with spices, or just oil with spices. Let it sit for a few hours, or even over night. It's then either grilled or put into a smoker. Jerk seasoning is not reserved just for chicken. It’s used on pork, fish, seafood, and even vegetables. It’s a very universal seasoning.

 

EASY BAKE JERK CHICKEN LEGS

 

 

  • 1/2 cup any type of vinegar
  • ¼ cup olive oil
  • 4 chicken legs (thigh and drumstick)
  • Kosher salt
  • 3 tablespoons Ancient Indian Spices' Jamaican Jerk seasoning
  • Preheat oven to 425°. Wash the chicken legs with vinegar. Mix oil and the Jamaican Jerk rub in a small bowl. Rub chicken legs with jerk spice mixture; season with salt. Place on a rimmed baking sheet and bake until golden brown and cooked through, 30–35 minutes.
