I have 68 female laying ducks that are very entertaining to all that come to visit our farm. I started out with a dozen laying ducks 2 years ago because everyone else seemed to have chickens in our area. Last winter we hatched our own eggs and now we have a raft of ducks that spend their days picking in the grass or swimming on pond (see photo). 4 nutritional reasons to eat duck eggs: 1) Duck eggs have twice the nutritional value of a chicken egg and stay fresher longer due to their thicker shell. 2) Duck eggs are richer with more Albumen making cakes and pastries fluffier and richer. Omega 3 is thought to improve everything from Brain health to healthy skin. 4) Duck Eggs are an Alkaline producing food, one of the few foods that leave your body more alkaline which is a great benefit to cancer patients as cancer cells do not thrive in an alkaline environment.
