Blue Earth is a bright, grassy, buttery and versatile Brie.

The two-and-a-half pound wheels allow the cheese to ripen slowly, creating a delicious alternative to our Bent River Camembert. Rich and smooth, Blue Earth reflects the fertile soils that dominate its namesake Blue Earth County.

Blue Earth evolved and developed as Alemar Cheese grew. We’ve always had a few brie hoops around to catch leftover Bent River curd. At roughly two-and-a-half pounds, the wheels took twice as long to ripen. The size and extra ripening time in the larger hoops gave the brie a unique flavor profile. With humble beginnings as leftovers, Blue Earth is all grown up, and boasts its own culture recipe we think you will find delicious.

The cheese is stored in a special paper that allows it to breathe. Please avoid plastic wrap! Store opened cheese in its original paper. Cheese is best consumed within a week of opening.

Most importantly, unwrap the cheese and allow it to come to room temperature; at least a half-hour during warm months, an hour in the colder ones.

Shipping is available anywhere in the United States. Packages are shipped second or next day air (depending on the season) in a cheese-friendly box chilled with ice packs.
